Tropical vibes abound with vegan -friendly vegan, Ceviche. “This entertaining papaya and Ceviche avocado have a lot of flavor, fiber and nutrients, including antioxidants, minerals, vitamins C, A, E, K and Folate,” Matey shares.

Ingredients

  • 1 cup ripe papaya (cubes)
  • 1 small avocado (in cubes)
  • 1 cup cucumber (in cubes)
  • 1/2 cup green onion (chopped)
  • 1/2 jalapeño, sowed and in cubes
  • 1/4 cup fresh coriander (chopped)
  • 1 lime juice
  • 1/2 tablespoons of lime lime
  • 1 tablespoon of tamari soup
  • 1/2 teaspoon pink salt of the Himalayas
  • 1/2 teaspoon of sweet black pepper
  • 1 tablespoon of extra virgin olive oil
  • 1/4 cup pomegranate seeds

Instructions

  1. In a mixing bowl, combine papaya, avocado, cucumber, green onion and jalapeño.
  2. Chop the lime juice, zest, tamari and olive oil over the mixture.
  3. Season with salt and black pepper, then pour gently to combine.
  4. Garnish with fresh coral seeds and pomegranate.
  5. Let it sit for 5-10 minutes, serve cold.
  6. Serve frozen as a refreshing appetizer or side.
