Raspberry Cheesecake Overnight oats take minutes to prepare and are packed with nutrients like oatsblueberries, lemon, cream cheese, greek yogurt, and chia seeds for a healthy, filling breakfast!

Blueberry Cheesecake Overnight Oats are perfect for a spring or summer breakfast! It would make a great breakfast or addition to your brunch. I’m obsessed with making them the night before we want to enjoy them. Overnight oats only take 10 minutes to prepare, so they’re super easy to make and super kid-friendly. These Raspberry Overnight Oatmeal Cheesecakes are creamy and rich with cheesecake flavors thanks to cream cheese, vanilla extract, and lemon juice and zest. They are delicious!

  • Old fashioned oats
  • Milk
  • Blueberry (or vanilla) Greek yogurt
  • Chia seeds
  • Blueberries (fresh or frozen)
  • Lemon juice and zest
  • Cream cheese
  • Vanilla extract

How to make Blueberry Oatmeal Overnight Cheesecake

Blueberry Cheesecake Overnight Oats is packed with nutritious ingredients, including old-fashioned oats, blueberries, blueberry Greek yogurt, milk, lemon juice and zest, cream cheese, vanilla and chia seeds. If you want an extra protein boost, you can add a scoop collagen peptides protein powder which has no flavor, but feel free to skip it if you’re not a fan of protein powder. Or use vanilla protein powder. Also, you can use plain Greek yogurt or vanilla instead of blueberry.

I like to mix my overnight oats in a large bowl and then transfer them to jars since I like to make more than 1 jar at a time. I made some blueberry sauce for this recipe, but feel free to just add frozen blueberries and they will bleed some of their juices and color and be delicious! I didn’t add any sweetener to these overnight oats, but if you like them sweeter, you can add some honey or maple syrup.

Blueberry Lemon Overnight Oats
A great tool for baking or making overnight oats is a food scale. The Taylor eco-friendly bamboo kitchen scale it’s amazing to accurately measure the ingredients for these overnight oats. I also love it for measuring flour because sometimes the flour can clump up when you’re measuring it and it’s easy to add way more than you need, which can ruin your recipe. This has a durable bamboo surface with a golden finish. It is very easy to clean and wipe after use.

Using a kitchen scale makes cleanup a breeze because you can measure everything in one bowl instead of getting out multiple measuring cups. Simply reset the scale each time you add ingredients to the bowl. With this Taylor scale, you can weigh up to 230 fluid ounces.

Oats are high in fiber and can help lower cholesterol levels. My husband has high cholesterol (genetic) and eats oatmeal 5 days a week to help. Blueberries are rich in antioxidant vitamin C, fiber and vitamin K.

During the cold winter months, it’s a good idea to stock up on vitamin C to keep your immune system strong and ward off colds. These raspberry cheesecake overnight oats are also high in protein from the milk and Greek yogurt.

How to Prepare Overnight Oat Meals

You can make a day’s worth of these Blueberry Cheesecake Overnight Oats at a time, or you can even make a week’s worth at a time. Feel free to do whatever works best for you. If I were making a multi-day batch of oats at a time, I would make two of one flavor and a couple of another flavor just for variety! Try the viral strawberries and cream overnight oats.

INSTRUCTIONS

  1. In a microwave safe glass bowl or in a small saucepan, cook the blackberries in a few tablespoons of water for 3-5 minutes until the blackberries pop and become a sauce.
  2. Mixture The oatsmilk, greek yogurt, chia seedslemon juice, lemon zest, cream cheese and vanilla together for overnight oats in a bowl or pint size mason jarsmall. You can use a kitchen Scale to accurately measure ingredients.
  3. Stir the blueberry mixture around the jar or stir into the oats and then add the oat mixture.
  4. Refrigerate overnight or for at least two hours.
