This recipe is crazy!
I can’t get enough peaches right now. They are in season late summer/early fall and I am here for their juicy flavor.
I eat them whole. I throw slices in my breakfast cereal. And doing this the easy cobbler on repeat.
With just six ingredients and minimal effort, you too can make a warm, comforting dessert that tastes like it took hours to make.
This Peach Cobbler with Cake Mix does just that with fresh peaches, cinnamon, brown sugar, cornstarch, butter and cake mix. Simply peel and slice your peaches, add them all to a prepared pan and let the oven do the rest.
Combining the juicy sweetness of ripe peaches with the rich, crumbly texture of a cake mix, this recipe is one the whole family will enjoy for any occasion.
Although this recipe calls for fresh peaches, you can easily swap them for frozen or canned if you want to make them at a time of year when fresh peaches aren’t in season!
What you’ll need on hand
Notes on ingredients
peaches: I use fresh peaches in this recipe, but canned/jarned/frozen peaches can work too.
cake mix: I prefer yellow cake mix, but you can use vanilla or white if you have that on hand
butter: acts as a flavor enhancer and crisps the cake mix coating.
brown sugar: it helps to caramelize the peaches and provide some sweetness. You can replace it with coconut sugar or maple syrup depending on what you have on hand.
cinnamon: it adds a warm, warm flavor
corn starch: helps thicken the juices from the peaches

Tips from the expert (that’s me!)
- Easy Peach Peeling: Cut a shallow “X” in the bottom of each peach. Plunge the peaches into a pot of boiling water for about 30 seconds, then transfer to an ice bath. Remove from the ice bath once cool and easily peel the peaches with your hands!
- You can use canned or frozen peaches. If using frozen, be sure to let it thaw in the refrigerator overnight. If using a can, be sure to drain any excess liquid before using.
- Let cool on a wire rack for at least 15 minutes before serving. This allows the juices to settle.
- Serve warm with vanilla ice cream, whipped cream or crème fraîche.
