These Peanut Chicken Bowls are packed with flavor, protein, and fiber! I loaded them up with a bunch of veggies, crunchy peanuts, garlic chicken, and a delicious peanut chili lime sauce that you’ll want to drizzle on everything. These bowls make a delicious dinner and I love that they are help yourself so everyone can add the toppings they want to their own bowl. This peanut sauce is full of flavor and I love the peanut benefits I talk about below!

Ingredients for Peanut Chicken Bowl

  • Brown rice
  • Thinly sliced ​​cooked chicken breast
  • Peapods
  • Steamed broccoli
  • carrots
  • Yellow pepper
  • Cucumber
  • Peanuts
  • cilantro
  • Green onions
  • Peanut butter
  • Toasted sesame oil
  • Soy sauce
  • Lime juice
  • Fresh ginger
  • Honey
  • Chili paste or Chili Crispy Onion
  • Rice vinegar
  • Garlic powder

Healthy Peanut Chicken Bowls

How to Make Peanut Chicken Bowls

First, cook your rice as directed. I used the 90 second quick heat brown rice to save time! Next, cook the chicken breast. You can grill them, bake them or sauté them in a pan like I did. I cut them very thin so they cook quickly. While your chicken is cooking, start slicing and chopping your vegetables as this takes the most time. I used whatever I had on hand including peppers, cucumber, carrots, broccoli, scallions, spring onion and cilantro.

Mix all the ingredients for your peanut sauce. I used natural peanut butter that was naturally runny, but if your peanut butter is thicker, microwave as much as you need in a small bowl so it mixes better with the rest of the ingredients. Put all your ingredients in bowls or storage containers and let everyone make their own bowls with the toppings of their choice.

Peanuts have always had a place in my meals and snacks. A huge part of this is – not only do they taste delicious – but they’re also packed with nutrients. Protein has been in the spotlight for a while now, but we’re finally getting some attention on every nutritionist’s favorite topic: fiber! Fiber is essential for digestion and helping you feel full. Women need about 25 grams of fiber while men need 38 grams. Most Americans don’t get enough fiber in their diets—many get only 15 grams a day, and peanuts have nearly 3 grams of fiber per serving.

What’s really nice about peanuts and peanut butter is that they have protein AND fiber. Many high-protein foods are low in fiber, and many high-fiber foods are low in protein. Peanuts have the advantage of containing both = 7g of protein and almost 3g of fiber per ounce! Peanuts also have vitamin E, magnesium, potassium and other vitamins and minerals. Plusthese bowls are packed with fiber from all the veggies, brown rice, peanuts, and peanut butter! A good mix of protein, fiber and healthy carbohydrates for a balanced meal that will help you feel better.

INGREDIENTS

  • 2 1/2 cups cooked brown rice
  • 2 1/2 cups cooked, sliced ​​chicken breast
  • 1 1/2 cups sliced ​​carrots
  • 1 thinly sliced ​​yellow pepper
  • 1 thinly sliced ​​cucumber
  • 1 1/2 cups shoestrings
  • 1 1/2 cups steamed broccoli
  • 1/2 cup cilantro, chopped
  • 1/2 cup chopped spring onion
  • 1/2 cup peanuts
  • Peanut sauce
  • 1/2 cup natural peanut butter (or regular microwaveable peanut butter)
  • 2 tablespoons of vinegar
  • 2 tablespoons of soy sauce
  • 1 1/2 tablespoons lime juice
  • 2 tablespoons toasted sesame oil
  • 1 tablespoon of honey
  • 2 teaspoons of grated fresh ginger
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon chili paste
  • Water to thin as needed

INSTRUCTIONS

  1. Cook the rice and chicken if needed. Cut and chop all the vegetables.
  2. Whisk together all the ingredients for the peanut sauce. If the sauce is too thick, add water to the mixture to achieve the desired consistency.
  3. In a bowl, layer the rice, chicken, vegetables, peanuts and peanut sauce.
