May 28 Have you tried Einkorn Spaghetti?

Einkorn is one of the oldest cultivated grains and a true ancient grain. Often referred to as the oldest form of wheat, it has been cultivated for thousands of years. Recently, I had the opportunity to try several grains from Grand Teton Ancient Grains, including millet, rye, spelled, and their pasta. I also spoke directly with the farmer behind Grand Teton Ancient Grains, who owns and operates their regenerative organic farm and mill. Between their thoughtful approach to farming and the quality and taste of the produce, I was truly impressed. Below you will find more information about my latest discovery, einkorn spaghetti, and how you can try it for yourself.

Einkorn 101

Einkorn is considered one of the first forms of wheat cultivated by humans. It was cultivated by the first farmers of the Fertile Crescent more than 10,000 years ago. It differs from other wheat varieties because it is the only wheat that never hybridizes, that is, when two genetically different parents create an offspring with different characteristics.

After being cultivated for thousands of years, it was largely forgotten until 1991, when archaeologists discovered a naturally preserved human in the Italian Alps. Analysis of its remains revealed that its last meal included einkorn, underscoring its role as one of the earliest cultivated grains in human history. Today Grand Teton Farms grows, mills and sells this delicious ancient wheat.

Einkorn pasta

Grand Teton Ancient Grains is an organic family farm and mill in Idaho. They use regeneratively grown organic einkorn, meaning the crops are rotated, planting companion crops and crops to make the soil richer each year with a variety of nutrients. Grand Teton Farms’ goal is to leave the land better than they found it.

Their einkorn pasta made with a single ingredient: stoned einkorn that is 100% USDA certified organic, non-GMO and kosher. It is also grown without chemicals such as glyphosate.

After harvest, Grand Teton stone mills stone mill on site at their mill. The semolina flour is then transferred to the pasta facility where pasta is made handmade style through bronze spaghetti dies.

Pasta is created in four shapes:

  • Spaghetti
  • Linguine
  • Angel hair
  • Fusili

To preserve the nutrients, fresh aroma and sweet taste of einkorn, each package of pasta is cut into bronze and then slowly dried at low temperatures.

To prepare, simply add the pasta to a pot of simmering water and cook for 5 to 7 minutes. Do not stir for at least a minute after the spaghetti has softened. Once drained, toss it with your favorite sauce and fill it with protein, healthy fats and vegetables for a balanced meal. To store uncooked pasta, place in an airtight container and store in a cool, dry place away from sunlight. To store cooked pasta, place in a resealable container in the refrigerator for up to 4 days.

The Nutrition Lowdown

Einkorn is a nutrient-dense grain. It contains remarkable levels of antioxidants, is higher in protein than modern wheat varieties, and may be less allergenic for some people than other forms of wheat.

For people with non-celiac gluten sensitivity, the type of gluten found in einkorn is often reported to be easier to tolerate and easier to digest overall compared to modern wheat. Because of the grinding, more nutrients remain intact, such as iron, manganese and vitamin B2.

In addition, it also provides fiber, which helps promote satiety and may help reduce the risk of chronic diseases such as cardiovascular disease and certain cancers when consumed as part of a balanced diet.
