Lighten your salad game with these fruit recipes.

Integrate a little summer sweetness and fresh season color with these delicious salad and dinner recipes. Some new ones, some old, but all are easy + delicious.

Corn, strawberry salad + avocado

Fast, easy, of course gluten -free and vegetarian.

This summer salad is delicious and loaded with fresh fruits and vegetables. Corn, tomatoes, cucumbers, strawberries and herbs! The ingredients are seasonal (and we hope they are cultivated locally), so they all explode with taste.

Ingredients

1 ear of corn, Husk was removed

1 English cucumber, chopped

2 cups of cherry tomatoes (vine, if possible)

1/2 avocado, cubes

2 cups of fresh strawberries, squares

1/2 cup fresh basil, chopped

1/3 cup fell slice (optional, only if tolerated)

1/2 lemon, juice only

2 tablespoons of olive oil

salt + pepper to taste

ADD: Grilled chicken, shrimp or quinoa for a protein-free meal a chopped meal.

Make the vegan and leave the slice (it’s so tasty, you won’t lose it).

Instructions

Bring a large container of water to boil. Once boiled, add the corn and cook for 5 minutes. Cut the kernels from corn to the bowl. Cut all other ingredients in the bowl. Crush the slice. Cut the fresh basil. Toss everything to combine. Top with lemon juice, olive oil and salt + pepper. Enjoy this salad right away.

Peach, tomato, royal, mint + slice salad

Beautiful, gluten -free and vegetarian, this salad tastes like summer in a bowl. They are sweet and juicy and the peaches and tomatoes mate so well with the salty slice and aromatic herbs. The crisis and kick of the encouragement is an additional bonus.

Salad

3 large peaches, pits removed + cut into 6-8 wedges per fruit (or nectarines, make sure they are mature!)

1 cherry tomatoes, with half

Half a small onion, peeled + slices thin

1/2 cup slice, crushed (optional)

10 large leaves fresh basil, chopped

10 large sheets of fresh mint, chopped

ADD: Chicken, salmon or quinoa for more protein and a chopped dinner.

Sauce

2 tablespoons of olive oil

1 tablespoon of red wine vinegar (

1/2 lemon, juice only

1 teaspoon of honey (or maple syrup for vegan)

1 clove of garlic, minced

salt + pepper, to taste

Instructions

Add all the salad sauce ingredients to a small bowl. Stir or shake together until well combined. Stand aside. Add peaches to slices, cherry tomatoes, encounter, slice, basil and mint in a large bowl. Fly with dressing. Season with salt + pepper.

Watermelon salad of four built -in

A simple, quick throw together that is gluten -free, without dairy products and vegan.

I love how juicy watermelon is. It is delicious with the royal verby, the tenderness of the lime and the acidity of the balsamic. So simple, so good. A wonderful summer classic.

Ingredients

1 “2 medium watermelon (about 7-8 cup cubes)

1 “4 cup fresh lime juice

1 cup fresh basil, chopped

Balsamic glaze

Optional additives: cucumber, strawberries, slice

Instructions

Cut the watermelon into about 1 cubes. Cut the basil. Add lime juice. Spray on balsamic. I recommend adding the balsamic glaze just before service. The glaze will eventually absorb watermelon and reduce its freshness. Spray as much as you want.

ADD: This is a very light dish, so serve as a side with green salad and roasted chicken or egg or tuna salad for a fresco dinner. The addition of slice will give the salad a salty cream. Use only if the dairy is tolerated.

Strawberry salsa

The flavors in this salsa are so unexpected. It is sweet, salty and spicy in every bite. It’s perfect.

Ingredients

Juice and heat of 1 medium lime

1 ½ teaspoon of honey or maple syrup

1 strawberry pint, boat and in cubes

1 Jalapeã ± O Pepper, sowed and chopped (use a smaller jalapeã ± o for less heat or leave in some seeds for more heat)

– small red onion, chopped

 ½ cup chopped fresh coral

freshly ground black pepper, to taste

bite of finely salt

Instructions

Mix lime juice and star, honey and salt. Combine chopped strawberries, jalapeã ± o, onion and coriander. Add pepper to try and mix well. Adjust the spices according to the needs.

If your strawberries are not sweet enough, add a more honey touch. If you need more tart, add a little more lime juice. Bring the flavors and add a little more salt. If the combined salsa sits for some time, the flavors will get married and the plate becomes more juicy. Let the ingredients mix for 30 minutes to make a big difference.

ADD: Grill chicken breast, shrimp or other fish and use strawberry salsa as a topper. Serve with a simple green salad. Vegetarian; Put the salsa in a simple quinoa bed. Delicious! This is also a large appetizer served with almond crackers.
