The easiest way to make a linen dinner is to remember this simple formula:
Protein + Vegetables + Oil + Seasonings → Bake at 400°F for about 25 minutes
That’s all. You don’t need a recipe — just mix and match what you already have in your fridge.
Start by choosing a protein such as chicken, sausage, salmon, shrimp, steak, tofu, or even meatballs. Then add two or three vegetables. Toss everything with olive oil, salt, pepper and a seasoning or sauce. Spread it on a baking sheet and bake it.
Dinner is done with almost no cleanup.
How to make a leaf dinner
When making a linen dinner, try to think about balance. I usually recommend including a protein, at least one vegetable, and optionally a starch like potatoes or sweet potatoes. This makes the meal more filling and works well for families, especially if you have growing children or active teenagers.
Some of the easiest vegetables to sauté include broccoli, green beans, peppers, zucchini, carrots, potatoes, sweet potatoes, Brussels sprouts, onions, tomatoes, and asparagus. These all bake up well and don’t need much prep other than chopping.
The key tip is to cut everything to the same size so it cooks evenly. If the pieces are too big, they take longer to cook. If the pieces are too small, they may burn.
