Instructions:
- In a dry pan that has been heated, add the walnuts and the breadcrumbs until golden brown, do not overcook them, smell the wonderful aroma and stir often. Leave to cool and chop. Stand aside.

- Heat the olive oil in a pan over medium heat. Add the grated jackfruit and cook until it starts to turn golden brown.
- Continue cooking for another 5-7 minutes until the jackfruit becomes slightly crispy.
- Heat the blue corn tortillas in the oven following package directions.
