If you’ve ever found yourself staring at the fridge at 5:30pm, wondering what the heck I can make (and fast!) that my kids will actually eat, these Air Fryer Flank Steak Tacos are for you.

They come together in about 15 minutes, use leftover steak (or chicken!), and feel fun enough that no one complains that it’s “boring dinner again.” It’s one of those low-effort, high-reward meals that ticks all my boxes as a dietitian and mom of three: nutritious, versatile, and realistic for busy nights.

This recipe basically started out as a total “use what we have and hope for the best” situation—and is now firmly in our weekly rotation.

I love a recipe that doesn’t require a run to the grocery store, a long prep list, or a lot of brain power. These tacos are:

  • Ready in about 15 minutes (even faster if using leftovers)
  • Super versatile depending on what’s already in your fridge
  • Easy adjustment for kids
  • Rich in protein and fiber without being fussy or complicated

The Ultimate Reftover-Friendly Dinner Hack

This is one of my favorite ways to give leftovers a second life. Leftover steak works great in the air fryer—it heats up quickly, stays juicy, and cuts perfectly for tacos.

No steak? No problem. This recipe is incredibly forgiving:

  • Leftover grilled steak of any kind works
  • Rotisserie chicken is a great swap
  • You can even cook the steak from scratch if you have the time

If your family loves taco night but you want to mix things up, we also love the 15-minute Korean beef tacos or a plant-based option like the lentil taco meat for kids.

Ingredients You’ll Need (Plus Easy Substitutions)

You don’t need anything fancy here. Just a handful of basics:

  • Steak (or steak or chicken)
  • Flour tortillas (use gluten-free if needed)
  • Avocado and lime
  • Salad mix or chopped lettuce
  • Grated cheese
  • Optional sauces such as salsa or chimichurri

One of my favorite things about taco nights is putting everything out family style and letting everyone make their own. Less commentary, less negotiation, more food. We do something similar with meals like sushi wraps where my kids build theirs.

How to Make Steak Tacos with an Air Fryer

This is very much a “do a few things at once” type of recipe and it couldn’t be easier:

  1. Air fry the steak (or reheat leftover steak)
  2. Heat your tortillas in a pan
  3. Cut avocado into slices and prepare the toppings
  4. Make your tacos and eat while they’re hot

This is often one of those meals where my kids start hovering in the kitchen because it smells good and feels interactive, which is always a bonus.

Fryer Tips for Juicy, Tender Steak

A few quick tips if using the deep fryer:

  • Preheat it, even if the model says you don’t have to—it helps with browning
  • Do not turn the steak while it is cooking
  • Let it rest before slicing to keep it juicy and tender

No deep fryer? No problem

You can definitely make this without an air fryer. Simply grill the steak over medium-high heat for 3-4 minutes per side until medium, let rest, then slice thinly.

One of the things I love most about this recipe is how customizable it is:

  • Dairy-free: Skip the cheese or use a dairy-free alternative
  • Gluten-free: Use gluten-free tortillas and check sauces for hidden gluten
  • Vegan: Swap the steak for thick-sliced ​​portobello mushrooms and use dairy-free cheese (or skip it altogether)

Serving ideas and leftovers

If you happen to have leftovers (which isn’t always the case here):

  • Turn them into taco bowls for lunch
  • Wrap everything in a pie or wrap
  • Toss the leftover steak into a salad the next day

  • 20 ounce flank steak
  • Olive oil for brushing
  • Salt and pepper
  • 1 large ripe avocado
  • 1 lime
  • 1 bag salad mix or a few cups of chopped iceberg lettuce
  • ½ cup grated cheese of your choice
  • ½ cup store-bought salsa verde or tomato sauce optional
  • ¼ cup store-bought chimichurri sauce optional
  • 4 to 6 flour tortillas 7 inch
  • Preheat air fryer to 400°F/200°C. Meanwhile, brush the steak on both sides with olive oil and sprinkle with salt and pepper. Air fry for 7 to 8 minutes for medium-rare or for preferred doneness, as fryer models vary in cooking times. Let rest for a few minutes, then slice thinly, crosswise for tender slices.

  • Meanwhile, coat a frying pan with oil and place over medium heat. Fry each tortilla for about 20 seconds until golden, then flip and repeat on the other side, stacking them on a plate as you go.

  • Zest the lime, slice the avocado, then toss the slices with the lime juice. Assemble the rest of your toppings (lettuce, cheese, salsa and chimichurri, if using).

  • Make your own tacos!

  • Air Fryer Tip: Preheat your air fryer even if not required by your model for best results. Avoid turning the steaks during cooking. This makes for better browning on one side, keeping the steak juicy inside.
  • No air fryer? You can simply grill the steak over medium-high heat, 3 to 4 minutes per side until medium-rare (130F/xxC). Let rest for 5 to 10 minutes, then slice.
  • Dairy-free version: Skip the shredded cheese or use a dairy-free brand like Daiya.
  • Gluten-free version: Use gluten-free tortillas and make sure your store-bought salsa and dip, if using, is gluten-free, as some may contain gluten for thickening.
  • Vegan version: Instead of steak, use grilled portobello mushrooms in thick slices. Skip the grated cheese or use a dairy-free one like Daiya.
