Sharing some of my ideas for dinner when I’m a parent solo.

Hi friends! How are you? I hope you enjoy the week so far! I have a podcast interview today, pilates, and we will probably hit the pool. We are trying to live the last part of summer before returning to school crazy.

For today’s post, I wanted to share some of my favorite ideas for dinner when I am a parents’ solo. Since the pilot returns with the airlines, he is back on the journey more regularly, while keeping it down with the crew here. When it is gone, the meals are more casual. They are things I can do in less than 20 minutes that I know we all love. I will usually make something that includes residues so we can enjoy them the next day for lunch.

For our family, meals will include some kind of protein, some kind of starch, fruits and/or vegetables. It does it enough plug and plays, and when children have rounded meals like this, they are happier (no blood sugar crash) and maybe a little less snack? (Although let’s be real, summer is an all -day snowstorm snack.)

Here are some of the things I have in rotation when it’s just me and I want to cook something tasty, healthy and fast.

Easy ideas for Solo Parenting Dinner

– Breakfast for dinner.

We do this at least once a week, whether the pilot is here or not, because it is a pleasant crowd and you can adjust it based on what you have. I could make gluten -free Hello Kitty waffles, pancakes (still loved these banana pancakes after all these years), French toast and serve it with breakfast sausage, bacon or eggs as protein and some fruits.

– Tacos, rice and beans.

I put the chicken in the instant pot with oregano, salt, pepper, garlic powder and some chicken broth and cook in the manual for 12 minutes. I broke it with the mixer and served with tortillas, beans, Mexican rice and guac. I will cut whatever fresh fruit we have in hand and serve it to the side.

– Spanish tortilla.

This is one of the favorites of all time. I will cook the tortilla and often serve it with chopped vegetables and guaches and a side of fruit.

– Greek salad cups.

This is another family favorite: chopped salad (you can use a kit to make life easier, or simply cut romaine, tomatoes, red onion, cucumber and add olives of kalamata and slice), cooked chicken (Rotisserie or Letover) File leaves of leaves (buy them in one of the traders and feta). Serve pita to the side.

-Nuggets of gluten -free chicken

Order these from Butcher And serve with salad and fruit. Easy parcels.

– Ramen with shredded chicken or shrimp.

I will buy a Ramen from Whole Foods (they have some gluten -free options) and add chopped chicken or sautéed shrimp and cut the fruit to the side.

– upset bowl with noodes.

We will mix a tone of vegetables (pepper, onion, broccoli, carrot, whatever we have in hand) and add cooked pasta and peanut butter sauce, tamari, rice wine, sesame, garlic, ginger, sriracha and sir. I make the sauce while vegetables and pasta cook and everything is so fast. I usually peak with sesame seeds and coriander.

– Gold bowl of trumpet sauce.

We often have that. It is only cooked rice (cooked in the instant container with equal parts broth/water and rice), salmon (cooked in fryer), cucumber, edamame, avocado and algae.

– Egg sticks in a bowl.

Just sauté a little ground meat with a mixture of cabbage/slaw, garlic, ginger and season with tamari, sriracha and sesame seeds. Top with everything except spices. I will serve with fresh fruit – whatever we have in hand.

– Homemade pizza.

Dough, sauce, pepperoni, cheese and served with salad or roasted vegetables.

– Sheets of meals!

We especially like the organic chicken sausage from Costco, peppers and broccoli

– Kevin sauce meal.

This is another fan fave. Kevin makes amazing sauces – I buy them from Thrives the market – And I will cook only a ton of vegetables, I will add a little chicken, steak, salmon or shrimp and add Kevin’s sauce before rice service. We love Teriyaki, the Korean barbecue and Coconut Curry.

– Turkish meatballs with pasta, sauce and veggie.

I usually make turkey meatballs in advance and freeze them for an easy/fast meal. This is my recipe
