Peanut Butter Banana Bars are soft, chewy, easy to make and nutritious with oats, peanut butter, crunchy peanuts and bananas. They are simple with only 7 ingredients and make a great breakfast or snack!

These peanut butter banana bars are soft and chewy and make the perfect breakfast. They come together so quickly with just 7 simple ingredients that you probably already have in your pantry and fridge. My family loves these bars for breakfast, but they also make a great snack. I like to meal prep them at the beginning of the week for easy breakfasts and snacks during a busy week. Peanut butter bars are dense and have a great chewy texture.

Ingredients for Peanut Butter Banana Bars

  • Old fashioned oats
  • Bananas
  • Peanut butter
  • Eggs
  • Honey or maple syrup
  • Baking powder

How to make Peanut Butter Banana Bars

Peanut Butter Banana Bars are so easy to make. To start, blend your oats in a food processor until they are ground into oat flour. You can also use quick oats instead of old fashioned oats. Blend all your ingredients in a blender until smooth. Pour the batter into a pan and bake for 20 minutes. At 20 minutes, check how done the bars are by inserting a toothpick into the bars. When the toothpick comes out clean, the bars are ready. Store the bars in the refrigerator for up to 5 days.

Peanuts and peanut butter are an excellent source of nutrients for children. I give my kids peanut products most days because they are a great source of protein, fiber, healthy fats and nutrients. My 10 year old daughter Adalyn is now in cross country and I give her peanut butter and jelly sandwiches for her races for amazing fuel.

My son Oliver and daughter Lily absolutely LOVE peanut butter in so many things, especially oatmeal and their favorite “peanut butter bread”, which is just peanut butter spread on top of an open slice of whole wheat bread.

I’ve teamed up with The Peanut Institute to share all about why peanuts are a great choice for people of all ages, body types and ethnicities. Peanuts are extremely versatile, affordable, nutritious and easily accessible, making them a health food.

Banana Peanut Butter Breakfast Bars

Eating peanuts and reducing the risk of cancer

Along with a healthy diet, regular consumption of peanuts and peanut butter can help prevent certain types of childhood cancers. A Study 2024 shows that the polyphenol-rich skins in peanuts may inhibit the growth of childhood leukemia cells. Polyphenols reduced the growth of these cells up to 72 hours after consumption. Peanut shells have bioactive compounds including antioxidants that help neutralize cell-damaging free radicals. So, when possible, look for peanuts in the shell.

Regular consumption of peanuts is associated with a lower risk of cancer. Eating 2 servings of peanuts or peanut butter per week reduced the risk of benign breast disease in young adults by 39%. Grab some peanuts or peanut butter and enjoy!

Peanut Butter Banana Bars

Preparation time: 10 minutes Cooking time: 20 minutes Total time: 30 minutes

INGREDIENTS

  • 2 cups old fashioned oats (or quick oats)
  • 2 ripe bananas
  • 1/2 cup peanut butter + peanut butter to drizzle on top
  • 2 eggs
  • 1/4 fl honey or maple syrup
  • 1 teaspoon baking powder
  • 1/4 cup chopped peanuts

INSTRUCTIONS

  1. Preheat oven to 350 degrees and spray a 7 x 11 glass baking dish with non-stick spray.
  2. Mix the oats in a food processor down to the ground. Add the remaining ingredients to the food processor and blend until smooth.
  3. Pour the batter into the pan. Bake for 20-25 minutes until a toothpick inserted into the center of the loaf comes out clean. Leave to cool before cutting.
  4. Top with drizzled peanut butter and chopped peanuts.
