Eating toast is a staple memory of the hot summer day for many of us as children. And I’m sure it will be for my kids too.

There’s nothing wrong with store-bought popsicles, but when you make your own popsicles, you can control what goes into them – including the amount of added sugar (if any).

These healthy homemade popsicles are made with whole fruit and a little honey (or not!) and are a great way to:

  • Avoid food waste by consuming extra products
  • Give your kids a portion of fruit (many kids don’t get enough)
  • Make something with your kids
  • Avoid artificial ingredients such as food dyes

Simple ingredients for fruit smoothies

  • Favorite Fruits: You can use fresh, frozen (thawed) or canned (drained) fruit
  • Honey: Feel free to leave it out or swap it out for maple syrup or another favorite sweetener

How to make 2-ingredient fruitcakes

Place fresh fruit (or frozen fruit that has been thawed) in a blender and puree until smooth. If the fruit mixture is too thick and does not mix well, drizzle with a little water, coconut water, or 100% fruit juice, such as apple juice.

You could also strain out the seeds and any mashed bits after blending, although I like to leave all of that in.

This recipe calls for three cups of fruit, which makes about 1 1/2 cups of fruit puree.

This quantity filled a little more than three of these large ice trays, but will obviously go further with smaller molds.

What kinds of different fruits work best?

I made them with fresh strawberries, blueberries, watermelon and pineapple. I also tried fresh peaches, thawing them a bit in the microwave before blending.

Taste and add honey as needed.

How much honey should you use?

Every fruit is different, so I suggested mixing the fruits and tasting them before adding honey. Some fruit mixes may not need as much honey as others. Or feel free to skip it altogether.

Pour into your favorite toast molds. The cases shown here are Zipper. I love mine too Zoku reusable loaf tins.

You can also use small paper cups covered with plastic wrap, then pierce a stick, place the cups on a baking sheet and freeze them.

Make a rainbow of healthy vegetables

  • To make red vegetables: Strawberries, red grapes
  • To make pink toast: Watermelon
  • To make oranges: Oranges, clementines or orange juice
  • To make yellow vegetables: Mango, pineapple
  • To make green vegetables: Green grapes (I added a handful of fresh spinach to mine)
  • To make blue/purple toasts: Blueberries, blueberries or black raspberries

Variations to test

  • Make a creamy version using fruit, honey and milk (such as coconut milk, almond milk or regular dairy milk)
  • Make yogurt pops (here’s my easy recipe for homemade yogurt tubes)
  • Give vegetables a vegetable boost by adding fresh baby spinach to the fruit puree

SUGGESTION: To release the frozen croutons from their molds more easily, run them under hot water or put them in a dish of hot water for about 30 seconds.

These homemade fruit bars are made with whole fruit and are a perfect healthy treat on a hot day.

Components

  • 3 cups fresh fruit of your choice, such as strawberries, watermelon chunks, blueberries

  • 2 tablespoons of honey

Instructions

  1. Puree the fruit in a blender until smooth. Taste and sweeten to taste.
  2. Pour into ice cube trays of your choice and freeze until firm.

Notes

Feel free to strain the fruit puree mixture before freezing, especially if it contains a lot of seeds (as with blueberries, for example)

Feel free to omit the honey altogether.
