#1Roasted red pepper with high protein content

ICOMPONENTS
- 1 cup of cottage cheese
- 1/2 cup roasted red peppers (from a jar, drained)
- 1 clove garlic, minced (or 1/2 teaspoon garlic powder
- 1 tablespoon of lemon juice
- 2 tablespoons chopped spring onions or fresh herbs (examples: parsley or dill)
- Salt and pepper to taste
INSTRUCTIONS
- In a blender or food processor, combine the cottage cheese, roasted red peppers, minced garlic, and lemon juice.
- Blend until smooth and creamy.
- Transfer the mixture to a bowl and toss with chopped spring onions or fresh herbs.
- Season with salt and pepper to taste.
#2 Baked sweet potato bites with guacamole

- 1 sweet potato
- 1 tablespoon of olive oil
- 1 teaspoon chili powder
- 1 teaspoon of garlic powder
- Salt Pepper
GUACAMOLE INGREDIENTS
- 1 avocado
- ½ teaspoon lime juice
- ¼ cup red onion, diced
- ½ medium sized tomato, chopped
- 1 tablespoon coriander
- Salt & pepper to taste
INSTRUCTIONS
- Preheat oven to 350°F. Line a tray with aluminum foil or greaseproof paper.
- Wash and peel the sweet potato. Cut into thin circular slices. Add your sweet potato slices to a bowl and drizzle with olive oil. Sprinkle the slices with garlic powder, chili powder and salt and pepper to taste. Stir until well coated.
- Place the slices in a single layer and cook for 10-13 minutes on each side (time may vary so check a few times)
- In a small bowl, mix all the guacamole ingredients and mash lightly with a fork.
- Once cooked, transfer the sweet potato slices to a serving plate, top with a spoonful of guacamole and serve!
#3 Mini Bell Pepper Nachos
Lively, crunchy and salty!
ICOMPONENTS
- 1 kg bag of mini peppers, halved and seeded
- ½ pound ground turkey
- 2 tablespoons taco seasoning
- ¼ cup canned black beans, rinsed and drained
- ¼ cup yellow corn
- ½ cup Mexican cheese or dairy-free alternative
INSTRUCTIONS
- Preheat oven to 400°F. Cook the ground turkey, breaking it into small pieces. Once fully cooked, add taco seasoning.
- In a bowl, mix the cooked turkey, black beans and corn.
- Place the pepper slices in a single layer, cut side up, and fill the peppers with the mixture. Sprinkle each pepper with cheese.
- Bake until the cheese is melted and the peppers are soft, about 6-10 minutes.
- Serve immediately and enjoy!
#4 Fried Avocado Bites

ICOMPONENTS
- 4 large, almost ripe avocados, cut into ½-inch slices
- 2 eggs, beaten
- ⅔ cup coconut or almond flour
- 4 tablespoons of lime or lemon juice
- 1 cup panko breadcrumbs
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon paprika
- ½ teaspoon of salt
INSTRUCTIONS
- Preheat air fryer to 350°F.
- Place the sliced avocados on a plate, sprinkle with lime juice.
- Add the coconut flour to a small bowl. In a separate bowl, add the beaten eggs. In a third bowl, mix the panko, garlic powder, onion powder, paprika,
- Dip the avocado in the flour, then the egg, then the panko mixture.
- Add avocado slices to the basket, spray with olive oil and air fry for 3-4 minutes. Turn over and air fry for another 3-4 minutes. Remove once golden brown and place on a serving platter. Serve with dipping sauce of your choice and enjoy.
#5Buffalo Cauliflower Wings
Our take on the classic!
ICOMPONENTS
- 1 head of cauliflower, cut into pieces
- 1 egg
- 2 tbsp whole wheat or gluten-free flour
- 1 tsp. chili powder
- 1/4 tsp. Cayenne pepper
- 1/4 tsp. Sea salt
- 1 pinch of pepper
INSTRUCTIONS
- Preheat oven to 400°F. Toss the cauliflower florets with the egg.
- In a large bowl, combine the flour, chili powder, cayenne pepper, salt, and pepper and toss to combine. Add morsels to the bowl and toss to coat each piece of cauliflower.
- Place on a cookie sheet lined with parchment paper. Bake until crisp, about 20 minutes.
- Serve with 1/4 cup guacamole, 1/4 cup salsa or hot sauce.
