In addition, it is filled with fibers, protein and taste – no fancy ingredients are required!
This recipe for Mississippi’s caviar, which is completely vegetable and gluten -free, was inspired by my mother’s southern cuisine. I found the well -used recipe in the old, green recipe box a few years ago. I took a photo of him with my phone, so I could try to do it at home. My mom’s initial recipe had a few less healthy additions, but the basic ingredients were still there: black eye peas, black beans, corn, tomatoes, onions and peppers. A twist of lemon juice, grinned by vinegar and olive oil, and sprinkle with herbs and spices helped bring out the healthy, fresh, satisfying flavors of this delicious dip and accompaniment.
I absolutely love this colorful recipe served with roasted tortilla chips or whole grain pie bread for an appetizer. It is also good as accompanied by Latin fare, such as Fajitas, Quesadillas and Tacos. It is really tasty as a salty treat to accompany recipes such as potato pot, lentils and veggie balls. And it’s just good as a salad or side-by-side on its own. There are so many great uses for this delicious, vibrant dish. It holds well so you can do it one day and enjoy it for a few days after the words. Pack it in your box the next day. Just serve in a large pile of leafy green and you have a great meal in one.
One of the best things about this recipe is that it is mainly based on foods that you can find in your closet with black eyes, black beans and corn. Garlic, onions, vinegar, olive oil, dried spices. Just add some fresh items – tomatoes, peppers and coriander – and have a versatile dish hit in a matter of minutes! In addition, you can pack the nutritional power of so many colorful, whole vegetable foods in this tasty recipe. You can easily exchange ingredients and black beans for kidney beans and cilantro for parsley. If you like a spicy bite, you can also reach the spice and jalapeño.
