We just found it in our archives and gave it a little facelift to reflect the ingredients that after more than 20 years as weight loss dietitians, we now look for to give our clients (and you, if you’re not one!) the best sustainable weight loss results.

We’ve added a crunchy, unexpected anti-inflammatory boost – hemp seeds! Yes, hemp seeds add a super healthy and fiber-filled crunchy twist. Breakfast pizza with eggs and mozzarella
Ingredients
- 1/2 whole wheat English muffin, such as the Ezekiel brand
- 2 mushrooms, sliced
- 1 spring onion, chopped
- 2 tablespoons diced green or red pepper
- ½ cup liquid egg whites, ideally organic
- 1/8 teaspoon black pepper
- oregano or Italian seasoning
- 2 teaspoons pizza sauce, such as 365 Organic No Added Sugar Pizza Sauce
- 3 tablespoons shredded low-moisture mozzarella cheese, partially skimmed, (ieIf you like fat-free mozzarella, use as much as you like, we recommend this option if you like it)
- 2 tablespoons of hemp seeds
Friday
- Preheat oven to 350° F. Cut English muffin in half and toast. stand aside.
- Heat the small non-stick pan over medium heat. Add the mushrooms, green onions and pepper. Cook, stirring constantly, for two minutes or until the vegetables are tender. Stir the egg substitute or egg substitute if using, black pepper and oregano, and 1-3/4 tablespoons of the hemp seeds into the vegetable mixture. Cook, stirring constantly, until the egg sets, about two minutes.
- Spread 2 teaspoons of pizza sauce on half an English muffin. Pour half the egg mixture over the pizza sauce and top with half the cheese. Pour the remaining egg mixture and cheese evenly over the muffins. Place the muffins on a baking sheet and bake for five minutes or until the cheese is melted. Then add the rest of the hemp seeds for a crunchy crust.
- Substitution idea (chia seeds can replace hemp seeds)
- Tip: Keep a bag of frozen mixed vegetables to use in this recipe. Any leftover pizza sauce can be frozen for another use.
