Cherry Pie Oatmeal Bars are filled with homemade cherry pie filling nestled between chewy layers of oats. They are nutritious, gluten free and make the perfect snack or dessert!

I love these Cherry Pie Oat Bars because they taste delicious, but are actually quite nutritious and super easy to make! It’s crazy how easy it is to make your own cherry pie filling. So much less sugar and tastes better too. These bars are packed with tons of juicy tart cherries for the most delicious dessert or snack. I’m a big fan of fruit bars – be sure to try my Blueberry Pie Oat Bars too. These bars are chewy and delicious whether for breakfast, snack or dessert.

If you have the cherry pie oat bars in the fridge, you can assemble them with your hands. Otherwise, you can enjoy them with a fork on a plate. These bars are fluffy, soft and so tasty. Something about the combination of cherry, lemon and cinnamon is so delicious. I think these bars would be great with a scoop of vanilla ice cream too.

Ingredients for Cherry Pie Oatmeal Bars

  • Old fashioned oats
  • Milk of choice (I like 2% milk)
  • Cinnamon
  • Baking powder
  • Applesauce or plain yogurt – I’ve used both and they work well
  • Brown sugar
  • Butter
  • Vanilla extract
  • Cherries- I used sour cherries from ALDI but fresh cherries or frozen tart or sweet cherries work perfectly
  • lemon juice
  • Honey
  • corn starch

How to make Cherry Pie Oat Bars

First, you’ll make your cherry pie filling by cooking the cherries in water, lemon juice, and honey until the cherries break down a bit. Then you add the cornstarch to thicken the sauce. When you add the cornstarch, the cherries thicken almost instantly for a delicious thick cherry pie filling. You will mix the ingredients for the oat bar layer and spread half the mixture on the bottom of a baking sheet covered with parchment paper.

Cover the oat layer with the cherry pie filling and cover with the rest of the oat mixture. Bake for about 20 minutes until the bars are cooked.

Are Cherry Pie Oat Bars Healthy?

These Cherry Pie Oat Bars are healthy enough for dessert! Cherries and oats have fiber. I reduced the sugar as much as possible while still making the bars taste sweet and dessert-like. I think these make a good breakfast paired with a protein like an egg or Greek yogurt. For dessert, they are also great and of course would be great with a scoop of vanilla ice cream.

How to Store Cherry Pie Oat Bars

You can store your bars in a sealed container for up to a week. You can store it on the counter for about a day. I haven’t tried freezing them but I believe they will freeze well.

Cherry Pie Oat Bars

Cherry Pie Oatmeal Bars are filled with homemade cherry pie filling nestled between chewy layers of oats. They are nutritious, gluten free and make the perfect breakfast or snack!

Preparation time: 10 MINUTES Cooking time: 20 MINUTES total time: 30 minutes

COMPONENTS

  • Oat bar layer
  • 3 cups old fashioned oats
  • 1/2 cup milk of choice
  • 1/2 tsp cinnamon
  • 1 1/2 tsp baking powder
  • 1/3 cup plain yogurt or applesauce
  • 1/2 cup brown sugar or Truvia brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup butter
  • Filling for cherry pie
  • 3 cups tart cherries – frozen sweet or sour, fresh or canned
  • 1/3 cup water
  • 1 tablespoon of lemon juice
  • 1/3 cup honey
  • 2 tbsp corn starch

INSTRUCTIONS

  1. In a pot over medium heat, cook the cherries, water, lemon juice, and honey and simmer until the cherries are a sauce – about 5 minutes. Mix the cornstarch with a little water until smooth.
  2. Add the cornmeal mixture to the cherry sauce and wire Good. Simmer until the sauce thickens and remove from heat.
  3. Preheat the oven to 375. Mix all the ingredients for the oat bar coating in a bowl.
  4. Cover a pan with greaseproof paper. Spread half of the oat mixture evenly in the bottom of the dish.
  5. Carefully spread the cherry pie filling on top of the first layer of oats. Spread the rest of the oat mixture gently over the cherry pie filling making sure it covers the entire cherry layer.
  6. Bake for 20 minutes until the oats are cooked. Remove from the oven and let cool at least a little and cut into 8 squares.

**Keeps well refrigerated for a few days.

**You can enjoy it cold, hot or at room temperature.
