Why make soup in a slow cooker?
The answer is simple: Convenience and time saving. A crockpot allows super hands away cooking. In addition, the long and slow cooking enhances the flavors of the soup (BONUS!). It’s super convenient for busy schedules, as you can simply start the slow cooker in the morning and return to a delicious soup in the evening. Now that’s kind of it simplification we want this year!

This recipe epitomizes what it means to find “comfort” in a bowl of soup. It incorporates all the flavors you’d expect from a classic baked potato, like potato, onion, bacon and cheese, with an added twist from some sneaky hidden cauliflower. When it comes to toppings (like the original baked potato) you can totally freestyle!

Slow cooker potato soup

Slow cooker potato soup
This Slow Cooker Baked Potato Soups combines all the flavors of a classic baked potato in one bowl. Creamy and comforting, it’s also quick and easy to prepare. Let the slow cooker do the work!

rust potatoes
peeled and cut into 1″ pieces -
4
cups
Cauliflower flowers -
1
yellow onion
chopped -

clove
peeled & chopped -

stock
(chicken or vegetable) -

cups
milk of choice -
Salt Pepper
to try -

bacon slices -
1/2
cup
grated cheddar cheese -
2
sliced green onions -
1/4
cup
whipping cream
Instructions
For the slow cooker
In a slow cooker add the potatoes, cauliflower florets, onion, garlic and stock. Season with salt and pepper and cook on low heat for 8 hours or on high heat for 4 hours. Stir in the milk and use a blender to blend until smooth.
Heat a pan over medium-high heat. When the pan is hot, add the bacon and cook for 2-3 minutes on each side until slightly crispy. Remove from pan and crumble when cool.
Serve the soup with bacon, cheddar cheese, green onions and sour cream.
For the cooking stove
In a saucepan over medium heat, add the potatoes, cauliflower florets, onion, garlic and stock. Season with salt and pepper and simmer for about 30 minutes until the potatoes are soft. Pour in the milk and use an immersion blender to blend until smooth.
Heat a pan over medium-high heat. When the pan is hot, add the bacon and cook for 2-3 minutes on each side until slightly crispy. Remove from pan and crumble when cool.
Serve the soup with bacon, cheddar cheese, green onions and sour cream.
