I absolutely love thick slabs of cheddar cheese and the sweetness of the cheese with the jam is the perfect combination. I usually add some spinach or arugula to the sandwich for some green too. This English Muffin Breakfast Sandwich brings the same combination to your breakfasts as a fried egg packed! You need to slice your cheese coarsely (you want to keep its texture instead of melting) and these Stone Wheat English Muffins they are the best ever.

Fry an egg of your choice. Tip: pierce the yolk so it cooks and doesn’t finish. And don’t forget to season with salt and pepper.

Spread a toasted English muffin with fig jam and add a few thick slices of sharp cheddar cheese. Add a handful of fresh rocket.
