Mango Chicken Kebabs are delicious and full of flavor with grilled chicken, mango, peppers and onions all cooked in a mango soy marinade.

Kebabs are one of my family’s favorite summer meals, and I’m embarrassed to say that it’s already mid-July and it’s my first time making kebabs this time of year. Good thing they’re super tasty because it was worth the wait! These Mango Chicken Kebabs are full of flavor and fun to make with grilled chicken, diced mango, bell peppers and red onion.

Mango Chicken Kebabs are delicious on their own or would be great served with rice or corn. You can even roast the corn! The mango in the mango marinade adds sweetness without adding real sugar and gives the chicken great flavor.

Grilled Mango Chicken Kebab

Mango Chicken Kebab Ingredients

  • Mango
  • Boneless, skinless chicken breast
  • peppers
  • red onion
  • Mango soy marinade – mango, soy sauce, olive oil, red wine vinegar, garlic powderonion powder

How to make Mango Chicken Kebabs

These kebabs are so easy to make with just 8 ingredients, many of which you probably already have in your pantry. Just mixture together the ingredients for the mango marinade – mango, soy sauce, red wine vinegar, olive oil, garlic powder and onion powder. Cut the peppers, onions, chicken and mango into about 1 inch pieces. The mango should not be too ripe and should still be firm so that it is easy to skewer. Marinate the peppers, onions, chicken and mango in the mango marinade overnight or at least for 1-2 hours. Put the ingredients on your skewers. If using wooden skewers, soak them in water so they don’t burn as easily. Grill for about 5 minutes on each side or until chicken is cooked through.

I am very ready to work with it National Mango Council because I’ve been a lifelong mango lover! We mostly eat it on its own. My dad eats the mango skin and my kids thought it was funny so they always eat the skin too. I’m not that crazy so I peel my mango! Mangoes are so delicious and full of nutrients.

A 3/4 cup serving of mango has 70 calories, 50% of the daily vitamin C, 8% vitamin A and 8% vitamin B6 – which helps support a healthy immune system. Mango also has fiber, folate and copper.

How to cut a mango

Part of our summer bucket list this year is to teach the kids how to do a bunch of everyday things and one of those includes teaching them how to cut different kinds of produce. I just taught them how to cut a mango and it’s very easy if you know where the pit is.

How I personally cut a mango is to first peel the mango. Next, I cut the mango from the side right next to the seed in the center of the mango. Then cut the large pieces to whatever size I want. Learn more ways to cut a mango here.

When I buy a mango, I keep it on the counter until it ripens. When it’s fully ripe, if I’m not ready to eat it yet, I refrigerate it. To see if a mango is ripe, squeeze it gently to feel if it is soft. For this recipe, you want your mango to be slightly soft but not too mushy so it will hold its shape on the kebab.

Mango Chicken Kebabs are delicious and full of flavor with grilled chicken, mango, peppers and onions all cooked in a mango soy marinade.

Preparation time: 20 minutes Cooking time: 10 minutes Total time: 30 minutes (not including marinating time)

INSTRUCTIONS

  1. Skewer the chicken, peppers, mango pieces and onion.

  2. In a mixermix mango, olive oil, soy sauce, garlic powder and onion powder.
  3. Pour the mango soy marinade on the skewers and marinate for at least 1-2 hours.

  4. Grill the kebabs over medium-high heat for about 4-5 minutes per side until the chicken is cooked through and has some grill marks.

**If using wooden skewers, soak them in water to prevent burning.
