This SALSA avocado corn is extremely easy to plague in just 10 minutes. Made of fresh or frozen corn, creamy avocado, spicy jalapeño, red onion, lime juice, coriander and salt, it is perfect as a snack along the side chips or to pair with your favorite Taco recipe!

Why do I attribute this recipe!
Who doesn’t love a fresh salsa, I’m right?!
I love the combo of the sweet, juicy corn that pops up in your mouth with the creamy, rich avocado. It is really a fight in the sky.
Add a little lime juice, coriander, red onion and salt and you have a delicious easy SALSA corn!
I like to make this recipe all year long, so I use both fresh and frozen corn for it. In the summer and early autumn, when the corn is during the season, I will use fresh corn just from the stalk (as with my tanned corn). But if it’s winter or spring, or if I’m just a busy mom who has stuck for time (anyone else related?!) I will use frozen corn.
As a dietitian, I know that frozen corn (and production in general) is still full of nutrients because it is frozen at the time of maturity and nutritional quality. That is why I use both fresh and frozen corn for my Mexican corn on my way!
I am obsessed with this salsa served with tortilla chips as a nutritious snack or healthy appetizer recipe or to serve alongside my favorite Mexican inspirational kitchen (ideas below)!
Is Taco still on Tuesday?!
Ingredients you will need

corn: can use fresh, frozen or canned. I like to use fresh in summer / fall months when corn is season. I like to use Frozen in the winter months or when I am connected for time (just remember to thaw in the refrigerator in the evening before or just before the microwave!). If you use canned corn, make sure you drain and rinse before using.
avocado: It adds a rich, creamy ingredient to Salsa. Make sure you use ripe avocado – to find out if ripe, gently press the avocado skin and should give a little if it is ripe.
jalapeño pepper: Adds heat and spice to salsa. If you like more heat, keep the ribs / some seeds. If you like less heat (like me), remove seeds and ribs.
Lime: Adds brightness and acidity to Salsa to enhance the taste
red onion: Adds a pop -colored, crunching and sharp taste to Salsa
arrow: Adds a taste of citrus and peppers to salsa
salt: It improves the taste
This salsa is full of nutrition!
As a dietitian, I think there are carbohydrates, fibers and fat in this SALSA recipe, making it more saturated and satisfying!
Avocados not only contain monounsaturated fat, but also in fiber, folic acid, pantothenic acid, copper, vitamin K, potassium and antioxidantsmall.
The corn is also high in fiber and contains vitamins A and C!
