Ingredients:

Avocado chocolate ganache

Makes about 1 cup

Ingredients:

Instructions:

  1. Preheat the oven to 350f. Butter the bottom and sides of an 8 “round baking and align the bottom with parchment paper. Put a small amount of cocoa powder in the pan and rotate to cover the sides.

  2. In a large bowl, mix well the almond flour, cocoa powder, sugar, baking powder, salt and espresso powder.

  3. In a medium -sized bowl, whisk the eggs, olive oil, vanilla and almond extracts.

  4. Mix the egg mixture in the dry ingredients and mix gently until fully combined. The stroke will be very thick.

  5. Scrape in the prepared pan and bake for 25-30 minutes or until a cake controller comes out with a few liquid crumbs.

  6. While the cake is baked, make the ganache. Add all ganache ingredients to the small bowl of a food processor. Procedure up to smooth, creamy and glossy.

  7. If the ganache still has avocado-y flavor, add a little more maple syrup. Add it to small increases, as the too much maple syrup will make Ganache Runny. The taste of Ganache is better on the day that is done, but it can be kept in the refrigerator for up to 3 days.

  8. When the cake finishes the baking, cool in a drawer in the pan. When fully and ready to serve, turn the cake, peel the parchment paper and place it on a sign.

  9. Spoonful of the prepared ganache on top and spread to cover the top. Any remaining cake should be kept covered in the refrigerator.

Note: Cocoa powder can be replaced for cocoa, but it will not have the same nutritional benefits.
