Happy new year! The holidays are over and I don’t know about you, but I’m ready to start packing in the nutrients again to help me feel better through the winter. Michigan has been very cold and snowy this year so far and nutritious meals are more necessary than ever. I love anything Greek themed and I created these kefte feta bowls that are so delicious but also packed with the nutrients our bodies need. These meatball bowls are great for lunch prep, so if you’re trying to eat healthy this New Year, whip up a batch of these feta meatball bowls.
Ingredients for meatball feta bowl
- Lean ground beef
- Breadcrumbs (panko or regular job)
- Egg
- Parsley
- Cheese slice
- Garlic powder
- Oregano
- Onion powder
- Brown rice
- Tomatoes
- Red onion
- Cucumber

- Hummus

Meal Prep Meatball Bowls
These feta meatball bowls are great for meal prep. Just save the orzo/rice with the meatballs, feta and chickpeas. Add the hummus, tomato, red onion and cucumber before eating. This will keep for a few days in the fridge and can be enjoyed cold or heated up for lunch.
Why cook with lean beef?
Years ago it was generally believed that red meat was “bad”. There are many healthy lean red meat options, such as cooking with lean beef! I like to choose 93% lean ground beef as a lean protein option. Some other leaner beef options are: top round, eye of round, sirloin and bottom round. Lean beef is considered a nutrient-dense food and can help support a heart-healthy diet. Lean beef is rich in nutrients such as protein, B vitamins, iron and zinc. I like to feed my family lean beef for these benefits.
I have 3 growing children who are very active and I like to serve them a high protein meal with lean beef. The American Heart Association recommends that when choosing beef, choose the leanest cuts. It helps to cut visible fat and combine lean beef with vegetables, fruits and whole grains.
I like that the lean beef is quite filling. My kids are always hungry since they are so active and I love knowing that I am giving them a hearty yet nutritious meal.

INGREDIENTS
- Greek meatballs
- 1 kg of lean ground beef
- 1/2 cup feta + 1/2 cup for later
- 3 tablespoons breadcrumbs
- 1 egg
- 1/4 cup chopped fresh parsley
- 1 teaspoon garlic powder
- 1 teaspoon oregano
- 1 teaspoon onion powder
- Gyro Bowls
- 3 cups cooked brown rice (or orzo pasta)
- 1 cup chopped tomatoes
- 1/2 cup onion, thinly sliced
- 1 1/2 cups English cucumber, diced
- 1/4 cup Greek dressing
- 1 can low sodium garbanzo beansdrain and rinse
- 1/2 cup hummus
- 1 cup pickled beets
- Lemon slices
- Parsley on top (optional)
- Whole wheat pie
INSTRUCTIONS
Preheat oven to 350 F. In a large bowl, mix together all the meatball ingredients. Form the meat into balls that are about 1 tablespoon of meat.
Place in a sheet metal which is sprayed with non-stick spray. Bake for about 15 minutes until the meatballs are cooked through and have an internal temperature of 160 F.
Mix together the tomatoes, onion, cucumber and Greek dressing in a bowl.
Once the orzo is cooked, divide the orzo into bowls and top with meatballs, cucumber salad, garbanzo beans, a dollop of hummus, beets, the remaining feta, a slice of lemon and if you want parsley.
**Alternatively, you can put all these ingredients in bowls and make it so everyone can serve themselves and make their own bowls which makes for a fun meal.
