The Honey Lime Jalapeno Grilled Chicken is loaded with roast chicken, colorful peppers, onions, zucchini and tomatoes served over brown rice with delicious lime honey jalapeno!
I am very excited to share these honey jalapeno grilled chicken bowl with you using the recipe of honey of my great aunt Jalapeno! It was a favorite who grows up and I knew would make the perfect marinade for my chicken and be amazing drizzled in these grilled chicken and veggie bowl. Honestly, when my kids tried this meal, their reactions surprised me. They loved dress so much that they immediately asked for more and asked me to make this meal over and over again. I didn’t know it would be so much one of my favorites.
This is the perfect easy meal on the grill that is amazing and is full of nutrients. I don’t know about you, but I refuse to leave the grill until it snowing here in Michigan. I love grilled food and these cups are delicious using the best Michigan products found on the local farmer. These cups make the most delicious dinner and can also be prepared for time and enjoys lunch! If you do not have a grill or you do not feel like baking, this meal can also be done in the oven in a pan or in a saucepan.

- No bones, chicken breasts without leather
- Bell Peppers in a variety of colors
- Onions
- Zucchini and summer squash

- Oil (olive or rule)

- Designed Jalapenos- I use domesticated jalapenos because my kids ate this, but you feel free to use fresh or normally pickled.

Lime jalapeno grilled chickens bowl
Chicken cups with roasted roasted chicken, colorful peppers, onions, zucchini and tomatoes served over brown rice with a delicious jalapeno lime honey sauce!
Preparation time: 20 minutes Cooking time: 10 minutes Total time: 30 minutes
Ingredients
- 1 1/2 lbs of bones, chicken without skin cut into 1 -inch pieces
- 1 green pepper, cut into pieces 1 inch
- 1 red pepper, cut into pieces 1 inch
- 1 yellow pepper, cut into pieces 1 inch
- 1 orange pepper, cut into pieces 1 inch
- 1 cup onion, cut into pieces 1 inch
- 2 cups chopped zucchini and/or summer squash
- 1 1/2 cups of cherry tomatoes
- Extra cilantro on top
- 4-6 cups cooked brown rice
Honey Lime Jalapeno Dressing
- 1/2 cup of canoe oil or olive oil
- 1/3 cup of lime juice
- 1/4 cup of domesticated jalapenos (or regular jalapenos)
- 3 tablespoons soup tame jalapeno juice (Jalapenos juice)
- 1 tablespoon of red wine
- 1/2 cup coriander
- 1/4 cup honey
- 1/2 teaspoon of sweet salt
INSTRUCTIONS
In a blender, combine all the ingredients for Honey Lime Jalapeno Dressing to smooth.
Toss the chicken, peppers, onions and zucchini and summer squash together and mix in about half of the marinade. If time allows, leave marinating for about 1/2 hour.
Lighten your grill and toss your chicken and vegetables either on a barbecue or on a grill mat and on the grill at a medium high for about 5 minutes on each side or until the chicken is cooked and the vegetables are softened. Add the tomatoes after the first 5 minutes.
To serve, add a spoonful of brown rice to a bowl and top with chicken and grill vegetables. Sprinkle in additional coriander and sprinkle with the remaining Honey Lime Jalapeno Dressing.
