This southwestern chicken salad packages tons of taste in a meal size salad that is also simple. The seasoned chicken, avocado, black beans and corn are thrown together with a creamy Greek yogurt southwest.

Do you feel boring your salad recipes? Spice things with this southwestern chicken salad! This salad has it all seriously – chicken spices, tons of vegetables, tortilla tortilla for crunching and a delicious creamy Greek yogurt dress.

This is also lunch -friendly – which is always a victory in my book.

You can prepare chicken and outfit in advance, as well as pre-chop all vegetables. Such a lifesaver when you have to get something on the table quickly for dinner or even a lunch from home.

Ingredients for Southwest chicken salad

Use these simple and fresh ingredients full of nutritional value to make this delicious Southwest Cicken salad recipe. Make sure you check the recipe card for the exact amounts of each ingredient you will need.

  • Chicken: Bone -free chicken breasts are one of our sources of protein for salads like this. You can also use Letenover Chicken or receive a Rotisserie chicken if you want to speed up the preparation for this salad.
  • Seasoning (chili powder, cumin, garlic): To add a lot of taste to the chicken, you will add all these spices before baking. You can replace with 1 tablespoon of taco seasoning if you prefer.
  • Romaine lettuce: I love romaine’s crunching for chopped salads like this, but you can use other greens such as lettuce, spring mix or spinach.
  • Sweet corn, tomatoes, pepper, red onion, avocado: A classic combination of vegetables that is ideal for this southwestern chicken salad. Feel free to skip not to like or try others such as green onion or cooked zucchini.
  • Black beans: Add extra protein as well as fibers to this meal size salad.
  • Tortilla chips: Love the additional crisis of some tortilla chips in salads like this. If you can find Tortilla strips – you can use them instead of chips.
  • Southwest dress: The homemade dress for this salad becomes extra creamy from Greek yogurt. Just throw it in a small blender with salsa, lime juice, coriander, honey, cumin and salt.

Variations

  • Make the vegetarian/vegan: Pass the chicken and add more black beans to make a vegetarian. For Vegan version, you should also replace the yogurt in southwest dressing with a simple, dairy yogurt.
  • Add a different protein: You can easily use the same mix of spices in some salmon for this salad instead of chicken.
  • Do it gluten -free: This recipe is gluten -free as it is written, if you double check that the Tortilla chips are gluten -free (most are gluten -free).
  • Make “Chicken Salad”: You can also make this like a chicken salad for a sandwich or wrap by pouring chicken, corn, tomatoes, pepper, onion and avocado in a bowl of dress. You can serve it over romaine or wrap it in a burrito.
  • Try a different salad sauce: Chipotle dressing in this shrimp salad would also be delicious if you are looking for another homemade dress instead of storage. You could also try it with a farm outfit purchased by the store.

How to make Southwestern chicken salad

This healthy Southwest Chicken Salad recipe is simple to concentrate in a few steps.

Make the chicken: Add the chicken breasts to a sprayed baking sheet. Combine the chili powder, cumin, garlic powder, salt and pepper in a small bowl and mix. Add the juice and star of the lime to the chicken and then sprinkle the spice mixture in the chicken and bake for 15-18 minutes or until cooked. Preparing and storing meal

Preparation: You can easily prepare many of the elements of this salad in advance and then assemble when you are ready to eat. You can make the chicken and dress 3-4 days earlier and store in an airtight container. Vegetables can also be cut 3-4 days earlier and stored in the refrigerator until they are ready for use.

Storage: This salad was best destroyed by dressing in a separate container. It will take about 3-4 days in the refrigerator (no outfit) or 1-2 days (with a dress).

  • Preheat the oven to 400 degrees Fahrenheit. Spray a baking sheet with cooking spray and add the chicken breasts. Combine the chili powder, cumin, garlic powder, salt and pepper in a small bowl and mix. Add the juice and star of the lime to the chicken and then sprinkle the spice mixture in the chicken and bake for 15-18 minutes or until cooked. Allow to cool then dice.
