Cottage cheese is having a moment.

Of rich in protein and calcium. And like cauliflower, it’s a wondrous duo of ingredients – capable of taking on the shape and form of all sorts of unexpected things.

As a former super picky eater, I have a problem with the texture of plain cottage cheese. So mixing it up is key.

I use cottage cheese in my protein pancakes or protein waffles, which I’ve been eating almost every morning for months.

So when I saw a video about 2-Ingredient Cottage Cheese Fudge, I had to try it.

I love fudge. Fun fact: For a few summers, I worked at one of those fudge shops on the beach.

But when I made the recipe for viral, it had a little too much cottage cheese for my liking. So I tweaked it until I came up with these Freezer Fudge Bites that taste like two-bite fudge.

No, adding cottage cheese to something doesn’t suddenly gain a halo of virtue. And fudge is still fudge.

But as someone who is increasingly sensitive to sugar’s effect on blood sugar, I appreciate that this fudge comes with a little extra protein – two grams in each.

Ingredients in Freezer Fudge Bites

  • Milk chocolate chips: My family and they liked the taste better when I used milk chocolate chips instead of semi-sweet.
  • Cottage Cheese: I use low fat, but you can use the kind you prefer.
  • Maple syrup: I use real maple syrup.
  • Vanilla extract: Pure or imitative, what have you.
  • It sprays: Optional (but fun!).

How to make Freezer Fudge Bites

Melt the chocolate chips in the microwave, stirring every 30 seconds until completely melted (this took about 75 seconds total in my microwave).

Combine the melted chocolate, cottage cheese, maple syrup and vanilla in a food processor. I use my confidant mini food processor for this. I’ve tried it in the blender and it’s too thick.

Line a mini muffin pan paper linings (or spray well with cooking spray). Spoon the mixture into the flats, about two-thirds of the way, sprinkle if desired and freeze until firm. It takes about 2-3 hours to solidify completely.

Remove from the pan and store in an airtight container in the freezer. Enjoy cold, straight from the freezer.

VARIATIONS

  • Use semi-sweet chips instead of milk.
  • Skip the maple syrup
  • Pour a spoonful of peanut butter into the batter
  • Pour the batter into a bowl and refrigerate for pudding

Questions about Cottage Cheese Freezer Fudge Bites

Can I use a blender?

Not in my experience, no. I tried using a high speed blender and the mixture was too thick.

How do I store these?

These must be kept in the freezer or they will melt. Once frozen solid, gently remove them from the muffin pan using a slotted spoon and place in an airtight container. Eat straight from the freezer.

Do these taste like cottage cheese?

No, as long as you use milk chocolate chips. The cottage cheese flavor was more noticeable when I used semi-sweet potato chips.

Can I use semi-sweet potato chips?

Yes, but they are not as sweet, and the taste of cottage cheese is stronger.

Can I make them lower in sugar?

You can omit the maple syrup if you like and/or reduce the chocolate chips to 2/3 or 3/4 of the cup.

How much protein are in these cottage cheese fudge bites?

If you get 20 Fudge bites in one batch, each one has 2 grams of protein.

Are these healthy?

“Healthy” is in the eye of the beholder, of course! I see them as a fun sweet treat.

A twist on the viral cottage cheese fudge recipe, these freezer bites are creamy and sweet, with 2 grams of protein each.

Components

  • 1 cup milk chocolate chips

  • 1 cup cottage cheese (I use low fat)

  • 1 tablespoon pure maple syrup

  • 1 teaspoon vanilla

Instructions

  1. Line a mini muffin pan with mini cupcake liners OR spray well with cooking spray.
  2. Melt the chocolate in the microwave in a glass bowl, stirring every 30 seconds until melted. Do not overheat! Set aside to cool slightly.
  3. Place the cottage cheese, melted chocolate, maple syrup and vanilla in a food processor. Blend until smooth and combined.
  4. Spoon mixture into mini muffin pan about 2/3 full.
  5. Put the pan in the freezer until it hardens, about 2-3 hours.
  6. When completely frozen, gently remove the Freezer Bites from the pan using a spoon.
  7. Store in an airtight container in the freezer.
